Sundays are totally made for coffee and pancakes... right?
While I usually make whole grain pancakes on Sunday and freeze or refrigerate extra for the next week, I decided to give banana pancakes a shot... and boy were they good!
So get that coffee brewing, drop those extra carbs and give this super easy option a shot!
- 2 Bananas
- 2 Eggs
- 1/2 cup rolled oats
- 1/2 tsp. baking powder
- Pinch of salt
- Mix all the ingredients in a blender and blend.
- Use coconut oil to coat the griddle.
- Cook both sides until golden brown.
